His professional career has seen him honing his skills in a variety of Michelin-starred establishments, ranging from the esteemed Lux Lucis in Forte dei Marmi, Italy, which boasts one Michelin star, to the globally renowned Dinner by Heston Blumenthal in London, a recipient of two Michelin stars. Edoardo’s extensive experience has uniquely positioned him to guide you through a captivating sensory exploration of the finest local and international gastronomic delights.

Ana Rosy Bollecchino began her culinary journey at Montecatini Terme’s prestigious hotel school at the age of 14. After graduating in July 2019, she swiftly joined the Belmond at Castello di Casole d’Elsa in Siena. Ana’s path led her through internships at renowned establishments, including the Mythos Hotel chain and Mercure Hotel chain. She specialized in pastry as a pastry commis at Castello di Casole d’Elsa. In May 2021, she furthered her expertise in French pastry. Ana now excels in crafting vegan and gluten-free cakes, tailored to specific dietary requirements.
